     Mandarin Muffins

Ingredients
1/2 cup butter or margarine
1 cup packed light brown sugar
3 eggs
1 & 1/2 cups all purpose flour
2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1 & 1/2 cups whole wheat flour
1/4 tsp. vanilla
 
1 cup orange juice
1 can (11 oz) mandarin orange segments, drained then cut into thirds
1 cup chopped pecans or walnuts

Instructions
Heat oven to 350 degrees. Grease 18 regular muffin cups. Beat butter and sugar in a medium-size bowl until pale yellow and fluffy; beat in eggs, one at a time.
Sift all-purpose flour with baking powder, baking soda and salt; stir in whole-wheat flour.
Add vanilla to orange juice. Fold flour mixture into butter mixture alternately with orange juice, beginning and ending with flour.
Fold in oranges, then nuts. Spoon into muffin cups and bake until lightly browned, about 30 minutes.
