Heat oven to 350 degrees. Line 2 large baking sheet pans with parchment paper.
In a large mixing bowl, cream the butter and sugar.
Beat in the egg and vanilla.
Beat in the banana, baking soda and salt.
Stir in the flour.
Stir in the pecans.
Drop by the tablespoon (we use a cookie scoop) onto the paper-lined pans - about 12 drops to a pan.
Use a finger to flatten by pushing down the centers.
Bake one pan at a time for about 12 minutes or until the cookies are brown around the edges and the tops are set.
Cool briefly in the pans and then remove to wire racks to continue cooling.
