     Lentil Burgers

Ingredients
3 cups cooked black lentils
4 large eggs
1/2 tsp fine salt
1 onion, finely chopped
1 cup toasted fine, whole-grain bread crumbs
1 tbsp. extra-virgin olive oil
 

Instructions
Combine lentils, eggs and salt in food processor and puree until the consistency of loose but textured hummus
Pour into bowl and add chopped onion.
Add bread crumbs; stir and let sit for a few minutes to absorb some moisture
Form in 12 patties, 1/2 inch thich each, addinr more bread crumbs if they're not firm enough. To cook, heat oil in skillet and brown for 7-10 minutes. Serve on whole-grain buns with favorite burger toppings
