     Drunken Chicken Thighs

Ingredients
8 chicken thighs
salt and pepper to taste
3/4 lb bacon, chopped (or andoille sausage peeled and chopped)
1 lg onion
1 green bell pepper
2-3 ribs celery
2-3 cloves garlic
2 T fresh thyme
AP flour
 
bottle of lager
Red hot hot sauce
14 oz can of diced tomatoes & chiles
1 cup chicken stock

Instructions
1. Brown chicken thighs 3-4 minutes on each side. (Salt and pepper to taste) 2. Pull out thighs and add bacon or sausage in. Drain drippings if there is more than a couple tablespoons. Cook for a couple minutes.
3. Add vegs and thyme. Cook until onions start to go translucent. Then add some flour (sprinkle a couple times around the pan) 4. Add a bottle of lager and hot sauce. (Red hot)
5. Add tomatoes and chicken stock and slide chicken back in.. Braise, covered, to finish chicken. 6. Uncover to thicken sauce. Serve with crusty bread.
