     Zucchini Bread

Ingredients
3 eggs
3 cups grated zucchini (unpeeled)
2 cups flour
2 cups sugar
2 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
 
1/2 cup coconut
1 cup salad oil
1 cup nuts (any kind)
Instructions
Mix all ingredients and bake for 1 hour at 325 degrees, until lightly browned and tests done with a toothpick.
