     Zucchini Boats

Ingredients
2 Large zucchini (12 inch long)
2 lbs, lean ground beef from the farm
1 sm. can evaporated milk
20 soda crackers or 1/4 cup bread crumbs
2 large eggs
1/4 tsp. salt
1 tsp. garlic powder
1 tsp. horseradish or hot sauce
1tsp. cumin
 
1 cup grated Edam cheese

Instructions
Wash zucchini, and cut lengthwise. Scoop out middle to remove seeds. In a large mixing bowl, combine all the ingredients except the cheese. Knead well with your hands. Fill the center of the boats with the meat mixture.
Set up your grill for indirect cooking, or pre-heat your oven to 375. Wrap your boats tightly in foil so it is sealed. Bake for 45 min.
After 45 min. unwrap the top of the boats. Cover with cheese, and bake for 15 min or untill the cheese melts.
Serve with a tossed salad, and some warm tortillas.
