     Lemon Cake

Ingredients
1 lemon cake mix
1 instant lemon pudding
1 3/4 cups water
3 egg whites
3/4 cup nonfat milk
1/2 tsp lemon extract
1 (1oz) instant sugar free vanilla pudding mix
8 oz light cool whipped topping
 

Instructions
Preheat oven to 350. Spray a 10 x 15 pan. In a large bowl mix together cake mix and lemon pudding mix. Pour in water and egg whites. Beat on low speed for 1 minute, increase speed to high and beat for 4 minutes. Pour batter into greased pan.
Bake for 25 minutes or until done. Allow to cool. In a large bowl combine milk,lemon extract and vanilla pudding mix. Fold in whipped topping and spread over cooled cake. Refrigerate when done.
