Cut each chicken breast into 3-4 pieces. protect meat with plastic
bag and beat with a mallet until pieces of chicken are of an open
thickness.
Heat olive oil in a heavy based fry pan over medium heat, add
butter. Add chicken breast and saute for about 5 minutes, until
golden brown. Turn and cook other side. Sprinkle chicken with salt
and black pepper. Transfer to heat dish.
increase heat on pan- let butter turn a light brown. Immediately
pour lemon juice, swirl pan and add herbs. place chicken in sauce.
serve immediately.
