Place the first six ingredients in a small bowl and blend with an immersion blender.
In a large skillet, cook the turkey, onion and garlic in oil over medium heat. Remove from heat, stir in the salsa, corn meal and seasonings.
Spoon 1/3 cup of turkey mixture down the center of each tortilla, top with 2 tbsp cheese. Roll up and place seam side down in a greased 11x7 baking dish. Spoon corn mixture over the top, sprinking with remaining cheese (and sliced black olives, if preferred).
Cover and bake at 350 for 30 minutes. Uncover and bake 5-10 minutes longer, or until heated through.
