     Mexican Lasagna

Ingredients
3 Tbs EVOO
2 lbs ground beef
2 Tbs Chili Powder
2 tsp Cumin
1/2 red onion chopped
1 15 oz pinto beans or black
1 cup med salsa
1 cup corn
8 - 8 in tortias
 
1 bag shredded cheese

Instructions
Pre heat oven to 425 degrees In a Lg skillet add EVOO add Chk or ground beef season with chili powder and cumin add red onion. brown until done. Add salsa, corn and Beans. Heat 2-3 min.
coat bottom of 8x8 pan with mixture. cut tortias in 1/2. layer tortias (flat edge touching the edge of pan. layer meat, cheese, and tortias.
Top with cheese and bake for 12-15 min until cheese is bubble. garnish with sour cream and olives (optional)
