     Carrot Cake

Ingredients
Cake-
1/2 cup oil
1 scant cup sugar
2 eggs
1 cup flour
1 tsp cinnamon
1 tsp baking soda
1 1/2 cups grated carrots
1/2 cup chopped nuts
 
Frosting-
1 oz. cream cheese
1/8 lb. margarine
1 cup confectioners sugar
1/2 tsp. vanilla
1/2 tsp. milk

Instructions
Cream together the oil, sugar and eggs
Sift together the flour, cinnamon, baking soda. Beat into the creamed mixture. Fold in carrots and nuts.
Bake at 300 degrees for 1 hour
Combine the cream cheese, margarine, confectioners sugar vanilla and milk to create the frosting. Frost the cake when completely cool
