1/2 cup oil

1 scant cup sugar

2 eggs

1 cup flour
|

1 tsp cinnamon

1 tsp baking soda

1 1/2 cups grated carrots
|

1/2 cup chopped nuts
|

Frosting-
|
|
1 oz. cream cheese
|
|
1/8 lb. margarine
|
|
1 cup confectioners sugar
|
|
1/2 tsp. vanilla
|
|
1/2 tsp. milk
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Cream together the oil, sugar and eggs
|
|
|
Sift together the flour, cinnamon, baking soda. Beat into the
creamed mixture. Fold in carrots and nuts.

Bake at 300 degrees for 1 hour
|
|
|
Combine the cream cheese, margarine, confectioners sugar
vanilla and milk to create the frosting. Frost the cake when
completely cool
|
