2 cooking apple (e.g. macintosh) peelied & chopped
1 lb parsnips peeled & chopped
salt, marg, butter, nutmeg, white pepper to taste
1 Tbsp olive oil
Instructions
Preheat oven to 375. Rinse chops and pat dry, cut one in half. Whisk the egg with 1 Tbsp water. Mix panko bread crumbs with chopped nuts.
Season both sides & edges of pork with salt, white pepper, and ground Thyme. Dip in egg mixture, press into bread crumb mixture. Set aside for at least 15 min.
Boil water in small saucepan. Add parsnip and boil for 10 minutes, then add apple and boil for another 5-10 minutes. Drain water, add butter, marg, seasoning or whatever to taste. Keep warm.
Heat olive oil in non-stick skillet until pretty hot. Brown the prepared pork chops for 2 minutes per side. Bake for 18 minutes. Do not overcook.
