1 lb chicken or turkey breast, thinly sliced (scallopini or tenders)
3 tbsp salted butter
1 tbsp fresh chives, chopped
2 large garlic cloves, chopped
1/2 tsp pepper
1/2 cup broth, chicken or vegetable
1-2 tbsp sake, to taste. A dry sake is preferred.
2 medium roma tomatoes, sliced
1 medium yellow squash, sliced
Instructions
Pre-heat oven to 350 degrees. In a small saucepan,
melt butter. Add in chives, garlic, and pepper.
Simmer over low heat for 2 minutes, then add
broth, sake, and tomatoes. Simmer, covered, over
low heat for 5 minutes, or until tomatoes start to
soften.
Spray a medium pyrex dish with non-stick spray.
Arrange squash slices along bottom of dish, then add
chicken/turkey. Drizzle sauce over top, making sure
that all pieces of poultry are covered.
Cover dish with foil, and place in oven. Cook for 30
minutes, remove foil, and cook for an additional 15
minutes, or until poultry is done.

Serve with your favorite vegetables - the sauce is great over asparagus!
