Also add to butter- 3 Tequila finely grated zest and juice of 2
limes--1 t coarse salt- 1/2 t coarse black pepper---2 T chopped
cilantro

heat a small skillet over high heat until smoking hot. Remove from
heat,and coriander seeds and stir until lightly toasted, 30 seconds.
Grind in a spice coriander. Mix with remaining brine ingredients,
stirring until salt and sugar dissolve....

Combine chicken and brine in a zipper style plastic bag. Pre heat
grill for direct med. heat Pat chicken, dry with paper towels, coat
with oi. Discard brine. Brush grill grate with oil. grill the chicken
covered until deeply browned. 15 minutes. Flip chicken and cook
10 min.

Sauce--melt the butter in a small skillet. Add coriander and
cumin--saute 30 seconds. Stir in tequila and bring to a boil.
remove from heat and add remaining ingredients. Turn chicken ad
baste with butter. Grill 10 min more ti 165 basting twice more. let
ret 5 minutes .
