     Minestrone Soup

Ingredients
1 Tbsp. olive oil
1 c. thinly sliced onion
6 cloves garlic, minced
1 c. diced carrots
1 c. diced celery
2 medium zucchini, sliced
3 c. cabbage, shredded
1 1/2 tsp. basil
2 tsp. oregano
 
2 tsp. salt or to taste
1/2 tsp. black pepper or to taste
6 c. chicken or vegetable broth
1 (28 oz) can tomatoes with juice
1 1/2 c. canned great northern beans, rinsed, drained
2 c. water
1 c. elbow macaroni

Instructions
Heat oil in large pot over medium heat. Add onion & garlic. Saute until soft. Add carrots & celery. Cook 5 minutes. Add cabbage. Cook 5 minutes more. Add oregano, basil, salt, & pepper. Cook 2 minutes.
Add broth & tomatoes. Lower heat. Cook 2 - 2 1/2 hours uncovered.
Add beans & water. Cook 15 - 20 minutes.
Cook elbow macaroni in salted water 8 - 10 minutes. Drain & add to soup.
