Grill chicken, or preheat oven to 400. Bake uncovered for 15-29
minutes, Turn chicken and bake another 8-10, until cooked
through. Let stand 10 minutes. Coarsely chop chicken and place in
a medium bowl. Add salt and pepper. Add celery, pecans, and
craisins.
In a separate bowl, whisk together mayo, mustard, lemon juice,
salt and pepper. Pour over chicken mixture and gently toss. Refrigerate.
Enjoy on a sandwich, with crackers, or on top of leaf lettuce.
