     Chicken Salad

Ingredients
3 boneless, skinless chicken breasts
1/2 tsp sea salt and black pepper
2 stalks celery, diced
1/4 cup pecan pieces
1/3 cup craisins or grapes cut in half
4 tbsp olive oil mayonnaise
3 tbsp lemon juice
2 tsp dijon mustard
1 cup diced apple or pear
 

Instructions
Grill chicken, or preheat oven to 400. Bake uncovered for 15-29 minutes, Turn chicken and bake another 8-10, until cooked through. Let stand 10 minutes. Coarsely chop chicken and place in a medium bowl. Add salt and pepper. Add celery, pecans, and craisins.
In a separate bowl, whisk together mayo, mustard, lemon juice, salt and pepper. Pour over chicken mixture and gently toss. Refrigerate.
Enjoy on a sandwich, with crackers, or on top of leaf lettuce.
