     Shepherd's Pie

Ingredients
3 cups cooked lentils (1/2 cups dried)
1/2 onion, chopped
Green bell pepper, chopped
4 cloves garlic, chopped
Carrot, chopped
Handful green beans, chopped
5 red potatoes
1/4 cup canola oil
Salt & pepper
 
Other spices to taste

Instructions
Heat the oven to 350. To cook lentils, rinse, and boil in a good amount of water for about 20 minutes. Drain.
Meanwhile, make mashed potatoes- Chop the potatoes and boil until soft. Drain and mash. (If you want, add a little soy milk, butter, cayenne, salt & pepper, etc.)
Combine the chopped veggies and the lentils in a casserole dish. Mix in the oil. Top with mashed potatoes. Bake for 30 minutes.
