     Confetti Rice

Ingredients
1 lb sliced bacon, cooked and diced
2 c long grain rice, cooked
2 c diced carrots, parboiled
2 c diced celery, parboiled
1 c fresh or frozen peas
soy sauce, optional
 

Instructions
In a large skillet, cook bacon until crisp. Remove to paper towels; drain all but 1/3 c of the drippings. Add rice, carrots, clery and peas to the drippings; cook until heated through, about 5-7 min. Stir in bacon. Serve with soy sauce if desired.
