     Lentil-Barley Stew

Ingredients
1/4 cup canola or olive oil
3/4 cup chopped celery
3/4 cup chopped onion
1 cup chopped carrot
2 cloves garlic, chopped
6 cups water
3/4 cup lentils
3/4 cup barley
1/2 teaspoon oregano
 
1/2 teaspoon black pepper
1 can (15 ounces) diced tomatoes
2 tablespoons vegetable broth powder

Instructions
Heat the oil over medium-high heat in a large soup pot. Add the celery, onion, carrot, and garlic, and cook, stirring, for about 5 minutes.
Add the water, lentils, barley, oregano, and pepper. Cover and bring to a boil, then reduce heat and simmer for 45 minutes.
Add the tomatoes and vegetable broth powder, and simmer for 15 minutes, stirring occasionally.
