     Crawfish Etoufee

Ingredients
1/2 cup butter
1 onion, chopped
1/4 cup celery, minced
1/4 cup green bell pepper, chopped
2 cloves garlic, minced
1 lb crawfish tails
1 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
 
1/4 tsp white pepper
1/2 tsp tobasco
1 1/2 tbsp flour
3/4 cup water
1/2 cup green onions, chopped
1/4 cup fresh parsley, chopped
1 cup peeled, seeded, and diced tomatoes

Instructions
Cook all ingredients until crawfish is fully cooked. Serve over rice or cornbread.
