     Erics Carrot Cake

Ingredients
1 1/2 c canola oil
2 c sugar
4 eggs
1 1/2 tsp cinnamon
1/2 tsp salt
2 tsp baking soda
2 c flour
2 c shredded carrots
1 c broken walnuts
 
frosting
3 oz cream cheese
1/4 c soft butter
1 tsp vanilla ext
2 tsp milk
1 c powdered sugar

Instructions
In a lg bowl mix oil and sugar. add eggs one at a time. mix well after each one. add salt, baking soda, cinnamon and flour beat until smooth.
Fold in carrots and walnuts. Pour into greased 13x9 pan. Bake at 325 degrees for 55-60 min. cool completly then frost
Frosting mix all ingrediants until smooth. add milk to smooth if needed.
