Ingredients
4 ounces bacon
Vegetable Oil (drizzle into pasta water)
1 tsp kosher salt
2 cups elbow macaroni
1 1/2 cups milk
2 tbsp unsalted butter
2 tbsp flour
4 ounces gruyere cheese, grated
3 ounces sharp cheddar, grated
 
2 ounces blue cheese, crumbled
1/4 teaspoon ground pepper
Bread crumbs

Instructions
Cook bacon until crisp. Cool, crumble, and set aside. Cook macaroni according to instructions on box (under cook slightly). Drain and put back into same pot.
Heat milk in a small saucepan, but don't boil. Add butter and flour. Remove from heat and stir with a whisk for about 2 minutes. Add milk mixture to the macaroni. Add all cheeses, 1 tsp salt, pepper, and bacon. Mix well. Pour into 8x10 pan. Sprinkle with bread crumbs. Bake at 350 degrees for 35 to 40 minutes...until browned on top and bubbly.
