     Chicken Stock

Ingredients
2 -3 whole roasting chickens
3 large onions, quartered
6 carrots, halved
4 stalks celery w/ leaves, cut into 3rds
20 sprigs fresh parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 whole head garlic, unpeeled sliced in 1/2
2 tbsp kosher salt
 
2 tsp whole black peppercorns

Instructions
Place all ingredients into a large stock pot and cover with 7 quarts of water. Bring to a boil, then reduce heat and simmer for 4 hours. Strain and discard all vegatables, herbs, and peppercorns. Store stock in air tight containers and freeze. Use cooked chicken for other recipes.
