     Matzo Ball Soup

Ingredients
Kosher chicken- buy 2-6 packs of whole chicken cut into pieces
carrots
scallions
seasoning- salt, pepper, consomme
Manischewitz matzo ball mix
eggs
oil
 

Instructions
For chicken- clean, remove excess fat and hair, put into pot. For carrots and scallions- clean, cut into small pieces, put into pot.
Add water so that it covers the chicken and veggies. Add salt, pepper, consomme to taste. Heat the water to a boil, then reduce to a simmer. Let the soup simmer for several hours, until the chicken starts to fall off the bone when raised (or until the soup tastes like it's done).
For matzo balls- follow recipe on box. Note that recipe on box is designed to make very small matzo balls. Lay matzo balls on cookie tray and freeze. Once matzo balls are frozen, put in plastic bags and remove as needed. If preparing matzo balls immediately before serving, put directly into soup. Note that matzo balls will absorb soup, so don't leave them in the soup for a while before serving. Noodles can be substituted for matzo balls.
