     Gertrude Cameron's Spaghetti Sauce

Servings   64 1/2 cup servings

Ingredients
1 peck tomatoes = 8qts or 2 gal
1/4 cup oil
4 cloves garlic
3 med onions
1 tbs black pepper
1/2 cup parsley flakes
2 tbs basil
1 tbs oregano
1 1/2 tbs salt
 
2 - 12 oz cans tomato paste
1/4 tsp red pepper

Instructions
Process tomatoes (removing skin and blemishes) and chop in small pieces (depending on how chunky you want your sauce)
Sautee onions in oil
Place all ingredients in pot or roaster. Mix well and cook until thick.
Put in quart or pint jars and process for 30 min in hot water bath.
