6 small red potatoes, sliced (I use 2 regular potatoes)
1 cup torn fresh spinach (I used 1.5 bags frozen, fresh would have been better)
2 Tbsp. sliced green onion (I use 1/2 yellow onion, chopped)
1 tsp. crushed garlic (I use 4 cloves)
6 eggs (I use 8-9)
1/3 cup milk (I use 1/2...1/4 whole, 1/4 non fat)
1/2 cup shredded cheddar cheese (I probably use about 1 cup)
Instructions
Heat olive oil in a medium skillet over medium heat. Place potatoes in the skillet, cover & cook about 10 minutes, until tender but firm. Mix in spinach, green onions, and garlic. Season with salt & pepper. Continue cooking 1-2 minutes, until the spinach is wilted.
(Ehh...I dumped the garlic, onions, potatoes in...basically made hash browns, then dumped in the spinach, etc...)
In a medium bowl, beat together eggs and milk. Pour into the skillet over the vegetables. Sprinkle with cheddar cheese. Reduce heat to low, cover, cook 5-7 minutes, or until eggs are firm.
