     Baked Salmon with Mango Mustard

Ingredients
4 salmon fillets, skinned
1 1/2 Tbl Sicabica's Habenero Olive Oil (or orange flavored olive oil)
salt and pepper, to taste
2 mangos, peeled and diced
3 Tbl cider vinegar
3 Tbl dijon mustard
 

Instructions
Place the salmon in a baking dish and sprinkle the olive oil evenly over the fillets. Season lightly with the salt and pepper. Bake in a preheated 350 degree oven 10 mins for each 1/2 inch thickness.
Pulse remaining ingredients in a food processor. Let sit 1/2 hour for flavors to marry. In the last 2 mins of cooking, liberally top with mango mustard.
Serving Suggestions
Serve with Antipasto Cous Cous.
