Place the salmon in a baking dish and sprinkle the olive oil evenly over the fillets. Season lightly with the salt and pepper. Bake in a preheated 350 degree oven 10 mins for each 1/2 inch thickness.
Pulse remaining ingredients in a food processor. Let sit 1/2 hour for flavors to marry. In the last 2 mins of cooking, liberally top with mango mustard.
