     Artichoke Nibbles

Ingredients
2 jars marinated artichoke hearts
1 1/2 cups yellow onion minced
1-2 cloves garlic minced
4 eggs
1/4 cup dry breadcrumbs
1/4 tsp. dried oregano, crumbled
1/4 hot pepper sauce
salt & pepper to taste
2 cups cheddar grated and/or 1 cup cheddar & 1 cup muenster cheese
 
3 Tbsp. parsley minced

Instructions
Preheat oven to 325 degrees. Grease a 7x11 inch baking pan.
In a medium skillet over medium heat, warm marinade from jars of artichoke hearts. Saute onions & garlic in marinade until soft, about 5 minutes. Remove with slotted spoon & set aside.
In a large bowl beat eggs, stir in breadcrumbs, oregano, hot pepper sauce, and salt & pepper to taste. Chop artichokes and add to egg mixutre, stir in onions, cheese, and parsley. Mix well. Pour batter into prepared pan. Cook until golden, about 30 minutes. Cut into 1 inch squares and serve.
Artichoke nibbles can be prepared one day ahead & reheated in a 325 degree oven for 10 minutes.
