     Beef, Pepper and Mushroom Saute

Ingredients
6 oz (175 g) beef steak, cut into thin strips
2 shallots, cut into small wedges
1 Tbsp chopped garlic
2 green peppers, seeded and cut into thin strips
3/4 cup (175 g) portobello mushrooms, sliced
2/3 cups beef broth (low fat/low sodium)
 

Instructions
Spray nonstick skillet with oil, and heat for 30 seconds. Add steak strips and stir fry for 1 minute, or until browned. Remove from sillet and set aside.
Add shallots, garlic and peppers to skillet and cook for 2 minutes. Add mushrooms and stir well. Pour in beef broth and bring to boil, reduce heat and simmer 4 minutes.
Return beef to skillet and cook an additional 2 minutes, or until steak and vegetables are to your taste. Add black pepper to taste.
