Cut apricots in half, discarding pits, and set aside
Pour honey into pan and add water. Add star anise
and cardamom, and bring to boil. Reduce heat to
simmer and cook gently for 5 minutes.
Add apricots to pan, cover with lid and simmer 10
- 12 minutes, or until tender. Remove from heat
and cool.
Drain apricots, and discard spices. Reserve the
juices, then transfer the apricots to the food
processor and puree for 1-2 minutes. Add a little
of the reserved juice if necessary.
Pour puree into container and freeze for 2-3 hours,
or until semi-frozen. Stir at least twice to break
up ice particles forming around the edges.
Once semi-frozen, serve in tall glasses. Garnish
with berries or other fruit as desired.
