     Swedish Rice Pudding (Risgrynspudding)

Ingredients
1 cup rice
2 cups water
1 teaspoon salt
1 stick butter (1/2 cup)
1 cup sugar
4 eggs, beaten
3 cups milk
1 cup half and half
 

Instructions
Wash rice, add cold water and salt. Bring to a boil, turn heat to low. Cover. Cook until water is absorbed.
Add butter. When butter has melted add sugar, milk, eggs and half and half.
Bake at 350 degrees for 1 hour or until nicely browned on top.
