2 c. toasted, slivered almonds (save 1/2 c. for garnish)
3 c. mayonnaise
1 T. curry powder
2 T. soy sauce
2 T. lemon juice
12 lettuce cups
1 lg. can lichi nuts
1 can pineapple chunks
Mango- fresh chopped or one can/jar
Papaya- fresh chopped or one can/jar
1 can mandarin oranges
Avocado, sliced & Watercress sprig
Instructions
Quarter water chestnuts; mix with chicken/turkey. Add grapes, celery and 1 1/2 c. almonds. Mix curry powder with mayonnaise. Stir in soy sauce and lemon juice. Combine dressing with chicken/turkey mixture. Chill for several hours.
To serve, spoon into lettuce cups, surround with garnishes, and top with watercress sprig.
