     Kartoffel Pfankuchen (Potato Pancakes)

potatoes, 1 med, per person, cut in small chunks
1 egg for every potato
1 med. onion for 4-5 potatoes, cut in chunks
1 T. flour per potato
salt & pepper

Blend all ingredients in blender. Mixture should not be too firm. In hot skillet, heat enough oil to cover pancakes. Ladle mixture into skillet, pouring 4 inch pancakes. Cook on both sides. Pancakes should be crisp. Drain on paper towel. Keep warm in oven until all pancakes are made.
Serve with applesauce!
