     Lemon walnut hummus

Ingredients
1/2 cup walnuts toasted and skins removed
1 tsp cumin seeds
1/4 cup extra virgin olive oil
1/4 red chilli powder/cayenne pepper
1 tsp salt
1/2 tsp coriander seeds
3 tbsp lemon juice
450 gms chickpeas
2 cloves gralic
 

Instructions
- Soak chickpeas over night. - Toast coriander and cumin seeds and grind to a powder with chilli powder and salt. - pressure cook chickpeas till tender
- In food processor combine chickpeas, lemon juice, oil, garlic, spice powder and walnuts. - Puree till smooth
- Pour over olive oil and some chilli powder and serve
