     Stuffed Italian Mushrooms

Ingredients
Olive oil
1/4 cup diced onion
1 Italian sausage out of casing
1/4 cup diced green and red bell pepper
1 clove garlic, chopped coarsely
Mozerella chees
Coarse salt
1/4 cup parmesan cheese
20 oz white button mushrooms, stems removed
 
Diced mushroom stems

Instructions
Clean mushrooms and remove stems and fringe from mushroom caps. Dice stems and put aside.
Filling- Saute quarter drop of olive oil, onions, sausage, pepper, mushroom stems and carlic until sasage is completely cooked. Season with salt and parmesan.
Spoon filling into each mushroom. Place on prepared baking sheet and sprinkle with mozzarella. Back 15- 20 min until mushrooms are lightly browned and tender.
