     Wok Seared shrimp en papillote

Ingredients
6 each Laughing Bird Shrimp
4 oz firm tofu (fried)
Carrot ginger broth (see sub recipe)
4 oz Snap pea's (cleaned)
3 oz Maitaki mushrooms
3 oz pea greens
1 each Parchment paper
Carrot ginger broth
 
3 qt carrot juice
1/2 cup ginger (chopped)
1/4 cup garlic (chopped)
1/4 cup lemon grass
3 each Thai chili
Salt and Pepper to taste
1/4 cup corn starch slurry

Instructions
Carrot ginger broth- combine first 5 ingredients. Reduce by half. thicken with slurry
Season shrimp, sear in wok or sauté pan Add vegetables and fried tofu add 4 ounces of carrot ginger broth sauté quickly for 2 minutes.
Place the parchment paper inside of a mixing bowl. Gently add stir fry in the center. Wrap the parchment paper like a beggars purse. Place in 350 oven for 1 minute to brown paper.
Use a pair of scissors' to cut open parchment paper tableside. The aroma is great. Use chopsticks to eat.
