     Rhubarb Cake

Ingredients
1 ½ c. flour
1 egg
1 ½ c. brown sugar
½ tsp. salt
½ c. shortening
1 tsp baking soda
1 tsp. vanilla
1 c. sour milk
2 c. rhubarb finely chopped
 
½ c. chopped nuts
Instructions
Mix all of the above ingredients. Pour into a 9x13 pan
Mix ½ c sugar, 2 tsp cinnamon, and ½ c. coconut and sprinkle over the batter.
Bake at 350 degrees for 40 minutes.
