     Peach Cobbler

Ingredients
1 cup all-purpose flour
2 tablespoon sugar
1 1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine
1/3 to 2/3 cups sugar
1 teaspoon cornstarch
1 egg
1/4 cup milk
 
4 cups unsweetened peach slices
1/4 cup water

Instructions
Topping-In a medium mixing bowl stir together flour, 2 tablespoons of sugar, cinnamon and baking powder. Cut in butter or margarine till mixture resembles coarse crumbs. Set aside.
Filling-In a sauce pan combine 1/3 cup to 2/3 cups sugar, and water stier in peach slices till boiling, reduce heat. Simmer, covered, for 5 minutes or till fruit is almost temder, stirring occasionally. Combine 2 tablespoons water and 1 tablespoon cornstrach.
In a small bowl stir together the eggs and milk. add to flour mixture, stirring just to moisten. Transfer filling to 2 quart square baking dish. Using a spoon, immediately dropp topping into small mounds atop filling.
Bake cobbler in a 400 oven for 20 to 25 minutes or till a wooden toothpick inserted into topping comes out clean.
