     Curried vegetable soup

Ingredients
6 C unsalted veg stock
2 C dried red lentils or yellow split peas
1 onion, chopped
1 T fresh ginger
1 T cumin
2 cloves minced garlic
1 tsp salt
1 tsp turmeric
1/2 tsp cardamom
 
1/2 tsp coriander
2 carrots peeled and chopped
2 med potatoes (not russet) chopped
2 C chopped cauliflower
cayenne to taste
6 oz can coconut milk

Instructions
Bring stock to a boil in medium soup pot. Add lentils, onion, ginger, cumin, garlic, salt, turmeric, cardamom and coriander.
Cook on medium-low heat for 10 to 15 minutes. Add potatoes and carrots, cook for 15 minutes, stirring often. Add cauliflower, broccoli and cayenne to taste. Cook for 15-20 minutes or until veggies are soft.
Sit in coconut milk, cook 1 minute.
