Combine sugar and corn syrup in a microwave safe
bowl.Cover with plastic wrap and microwave on high
3-1/2 min. While it's cooking, line a baking sheet
with parchment paper and set aside.
Remove dish from microwave and stir in peanuts and
margarine. Cover and return dish to microwave for 3-
4 min or until mixture is pale golden brown.
Immediately add baking soda and vanilla, stir well
quickly and turn out onto parchment paper, spreading
as thinly as possible with a spatula. Cool
completely in the fridge; break into pieces.
