     Roasted Red Pepper Soup

1/2 cup chopped onions
1/4 cup clarified butter
6 roasted red peppers or a 16 oz jar of roasted peppers
1 jalapeno
2 cups chicken stock
2 Tbs lemon juice
4 cups heavy cream
1 tsp Worchester sauce or to taste
salt to taste

Sweat the onions in butter (DO NOT BROWN). Add all remining ingredients except for cream. Bring to a boil. Simmer for 25 minutes. Puree in food processor; with hand blender or in batches in a traditional blender. Return to stove and slowly add cream. Warm (DO NOT BOIL).
