     White chicken chili soup

Ingredients
6 bone in chicken breasts baked and shredded
1 cup chopped celery
1 onion finely chopped
1 green pepper chopped
1 cup white wine (optional)
48 oz jar great northern beans
8 oz pepper jack cheese (more if you like it cheesier)
16 oz salsa (I like Jacks special)
6 cups chicken broth
 
2 1/2 tsp cumin
lots of pepper

Instructions
Bake bone in chicken until cooked and shred.
cook onion, pepper and celery in olive oil until translucent. Add wine and simmer uncovered until liquid is reduced by 1/3
Add Chicken, beans, salsa and chicken broth. Cook just to warm it all up and add cheese until melted.
