     Tomato preserves

Ingredients
6 cups chopped fresh tomates (I ued sweet 100's or cherry) bu anbe any type
6cups sugar
3T grated fresh ginger
zest od 1lemon
juice of 1 lemon
1fresh lemon very thinley sliced
 

Instructions
combine ingrediants in large pot with 1 T canola or coconut oil (keep from boiling over)
Simmer on low heat stir till sugar disolved. heat on medium to a slow boil stirring oasionally. cook for approximately 30 minutes or until jam is starting to thicken. Test consistancy by droppig a teaspoon of jam on a cold saucer to see if thickened enough.
Put in hot sterile jars and seal
