     Sweet Pickles

Ingredients
1 cup salt
1 gallon water
2 Tbl Alum
About 1 1/2 gal. pickles
1 qt. vinegar
5 cups sugar
2 Tbl pickling spice, in a bag to 1 gal. pickles
3 more cups sugar
 

Instructions
Mix salt in water. Let pickles tand in this for 7 days. Stir every day. After 7 days, put pickles in clean water for 3 days, changing water every day.
Slice in desired chunks and boil in alum water. (2 Tbl alum to 1 gallon of pciles. Let stand over night.
Next day, wash pickles off good and drain water off, thoroughly. Dry pickles on a heavy towel.
Bring to a boil vinegar, sugar and pickling spice. (Can add green food coloring) Pour mixture over pickles. Do this for 3 days. Then for 3 more days add a 1 cup sugar each morning. When brought to a boil on the 6th day, put in jars and boil in water bath for 5 minutes to seal.
