     (OZ) UN-FRENCH ONION SOUP

Ingredients
2 cups WATER
2 BEEF BOUILLON cubes
1 large SPANISH ONION - cut into rings
1 inch thick slice ITALIAN BREAD
2-3 Tbl. shredded SWISS CHEESE
(optional) 1 teas. BROWN SUGAR
(optional) sprinkle of PARSLEY
(optional) 1 Tbl. real BUTTER
(optional) dash of WORCESTERSHIRE
 

Instructions
Choose method to prepare onions. A- boil them. B- saute them. C- Sweat them in a covered pan for 15 minutes, stirring occassionally, add brown sugar and stir-fry for 5 minutes. D- Sweat the onions then cook them forever until they carmelize. I prefer to saute them in butter and add a dash of Worcestershire.
Now that the hard part is over, boil the bouillon in the water and add onions, stirring occassionally.
Meanwhile, place bread under broiler for about a minute, flip it over and broil about another minute. Top with cheese and broil about another 30 seconds or until it is melted. Sprinle with parsley if desired. Pour soup into a large bowl and float the bread on top. Enjoy.
I realize that if you saute your onions that it might be considered French. You can make up for this by listening to German Polka music as you cook.
