1 lb french string beans or green beans (ends removed)
Kosher salt
1tb unsalted butter
1 tb EVOO
2 large shallots- diced large
1/2ts black pepper
1/8ts crushed red pepper flakes
Instructions
Boil pot of salted water. Prepare ice bath. Boil french string beans for 1 1/2 min and green beans for about 4 minutes in boiling salt water until crisp-tender. Drain and blanch in ice bath. Drain green beans again.
Heat saute pan on medium to medium high heat. Add EVOO and butter. Saute shallots and crushed red pepper flakes until lightly browned.
Add string/green beans and 1/2 ts salt and black pepper. Heat until beans are hot.
