     Apricot Muffins

Ingredients
120g raw sugar (1/2 cup)
120g butter
2 eggs
250mL milk
Juice of 1 orange (1/4 cup orange juice)
200g packed chopped, dried apricots
1 1/2 cups self raising flour
 
Instructions
Preheat oven to 200șC (190șC fan forced) Beat sugar and butter together. Add eggs one at a time and beat well. Add apricots and beat well.
Add milk and orange juice and mix. Fold (or beat with electric beaters) in flour. Spoon mixture into greased or lined muffin pans.
Bake for 20-25 mins or until brown
