     Smoked Cheese Grits

4 cups of water
6 to 8 drops of liquid smoke
4 oz of roasted red peppers, diced
2 cups of stone ground or instant grits
1/4 cup of cream
1/4 cup of onion minced
salt and pepper
1/2 cup of shredded sharp cheddar cheese
1 tbl of butter

Mix water and liquid smoke together and bring to a boil. Reduce heat and stir in grits. Cook for 12-15 minutes.
Add butter and onions to a skillet and saute for 3 minutes. Add roasted red peppers, cream, and salt and pepper. Simmer on low for 2 minutes, stirring constantly.
Stir the cream mixture and cheese into the grits until well mixed. Serve hot.
