For cake, sift together flour, sugar, soda and salt. Beat in eggs, one at a time. Add carrots and cinnamon. Grease and flour a 9x13 pan. Bake for 25 to 30 minutes at 350F.
For frosting, cream together cream cheese and butter. Stir in flavorings. Add powdered sugar, a little at a time, beating well until mixture is smooth, but do not overbeat as the shortening and cream cheese will get too thin.
