     Raised Doughnuts

Ingredients
4 tsp yeast
2 tblsp sugar
3/4 cup water
2 cups milk
7 cups flour
2 eggs( well beaten)
6 tblsp. butter
1 cup sugar
1 tsp salt
 

Instructions
In large mixer bowl add dry yeast, 2 tblsp sugar to 3/4 cup warm water. Set aside until yeast is disolved and starts rising.
With flat beater in place add luke warm milk, sugar, salt,shortening and beaten eggs. Mix on low, until ingredients are well blended. Switch to dough hook, add flour 1 cup at a time stirring until mixture forms a ball of dough which follows the dough hook around the bowl. Place dough into a lightly greased bowl and cover with towel. Big tupperware bowl with lid works well. Allow to rise in a warm place for 30 min.
Punch dough down to exhaust air and add a little flour if necessary. Let rise until double in bulk. Roll 1/2 in. thick and cut with doughnut cutter. This recipe makes about 50 doughnuts. Allow doughnuts to rise until double in bulk 45-60 min.
Using caution, heat oil or shortening to 375 degrees in frying pan or deep fryer. Fry doughnuts 3 or 4 at a time until golden brown turning as necessary. Drain on plate with paper towel on. You can sugar the doughnuts or make a glaze of 2 cups powdered sugar and 1/3 cup hot water. Keep glaze warm over hot water. Double boiler works well.
